I currently own a 2010 GTS and a 2013 S, also owned a 2014 GTS so if you have questions i think i may have some answers. As stated above the S will not hold the revs and it will shift up automatically. The engine tune/map and the transmission map is different on the GTS and I can tell you the 2 cars drive nothing alike. The GTS feels light and more nimble and lighter on its feet as where the S feels heavier and seems to need a lot more effort to get going. I have owned 2 Gen 5 S cars and they both felt the same compared to the GTS.
