I've just bought a secondhand granturismo (new was 20K more!) and this one was exactly the colour i wanted (nuvolari) however i had to accept the inside which has rosewood trim and light colour headlining. Does anyone know whether it's even possible to have either the trim or the headlining changed?

Sure!
Step 1. Purchase wheelbarrow
Step 2. Fill wheelbarrow with cash
Step 3. Push wheelbarrow to custom shop
Repeat as necessary
Seriously though I'm sure you could order replacement trim parts and have them installed. The headliner could be changed by an expert interior guy. Look for someone who does restorations. It's going to cost you though!
